Made With Love Recipe: Tossed Sesame Soba Noodles


Getting under the weather? Practically melting in the sweltering Singapore sun?

Well, we have the perfect lunch to pick you up! Refreshing, simple and oh-so delicious!

Ingredients:

180g soba noodles

½ cup shitake mushrooms sliced*

1 clove garlic chopped finely

1 teaspoon ginger chopped finely

3 tablespoons rice wine vinegar

2 tablespoons light soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 teaspoon sesame seeds

*Shitake mushrooms can be fresh or dried. For dried mushrooms, soak in boiling water for 20 minutes and drain. Save the water as stock.

Recipe:

1. In a pot, cook the mushrooms and soba noodles in boiling water for 7-8 minutes.

2. Combine the rice wine vinegar, soy sauce, sesame oil, sugar, garlic and ginger in a bowl and stir well.

3. When noodles and mushrooms are cooked, drain and run under cold water. When noodles have cooled, toss in the dressing.

4. Sprinkle sesame seeds on top and serve.
